Pavlova

Ingredients

  • 4 egg whites
  • 1 cup granulated sugar
  • 2 tsp cornstarch
  • 2 tsp vinegar
  • 2 tsp vanilla extract
  • 1 pinch of salt

For Pastry Cream:

  • 2.5 cups of milk
  • 4 egg yolks
  • 1 cup granulated sugar
  • 1 tbsp flour
  • 1 tbsp wheat starch
  • 1 packet of vanilla sugar
  • 3 tbsp cold unsalted butter
  • 70 grams of white chocolate

For Decorating:

  • Strawberries
  • Pistaches
  • Forest Fruits
  • Blackberries
  • Raspberries

Instructions

  1. First, heat your oven to 150 degrees.
  2. While your oven is preheating, put the egg whites and salt in a bowl and start whisking. Whisk slowly at first, then rapidly. Continue the whisking process until you reach the appearance of snow.
  3. While continuing to whisk the egg whites, add the sugar and continue whisking until the sugar is well absorbed.
  4. The sugar may dissolve faster if you add it not all at once but in several drops. Add the starch, vinegar, and vanilla.
  5. Use a spatula and mix from bottom to top, making sure the ingredients are well blended.
  6. Line a baking sheet with baking paper and grease it with a thin layer of oil. Pour the mixture onto the tray and spread it into a round shape.
  7. Spread the mixture in the center of the tray towards the edges, and make sure that the center is slightly hollow. The dessert will not rise, so you may expect the size to be the same when it comes out of the oven.
  8. Place the tray on the lowest shelf of the oven and reduce the heat to 120 degrees. Bake the dessert at 120 degrees for the first 12 minutes. Then reduce the oven temperature to 100 degrees and bake at this temperature for 1 hour.
  9. Leave your dessert in the oven at the end of the cooking process. Sudden temperature changes can cause the dessert to break.
  10. For the pastry cream, put all the ingredients given in the recipe in a bowl and mix.
  11. Prepare the pastry cream close to the end of the dessert baking process.
  12. After the base of the dessert has entirely cooled down, carefully spread the cream patisserie over it.
  13. Finally, you can decorate your dessert with the fruits of your choice. Bon Appetit!

  • Make sure that your eggs are at room temperature.
  • When separating the egg whites, make sure that they are not mixed.
