Patatas Bravas


  • 4-5 potatoes
  • Half a cup of olive oil
  • 2 tsp. salt

For the sauce:

  • Half a glass of tomato puree
  • 1/2 onion
  • 3 tbsp. olive oil
  • 3 tbsp. mayonnaise
  • 1 tbsp. red chili pepper
  • 1 clove of garlic
  • 1 tbsp apple cider vinegar

For the aioli sauce:

  • 150 ml of milk
  • 3 cloves of garlic
  • 20 grams of apple cider vinegar
  • A pinch of salt
  • Sunflower seed oil

  1. Peel and dice the potatoes. Cook the potatoes in oil over low heat for 5 minutes.
  2. After 5 minutes, place the potatoes on a paper towel and let them release the oil. For the sauce, put all the ingredients in a bowl and whisk with a mixer.
  3. For the aioli sauce, put all the ingredients except the oil in a bowl and whisk with a mixer. Add sunflower oil while whisking and mix until it thickens.
  4. Put the potatoes back into the hot oil and fry for 4-5 minutes. Drain the oil from the potatoes by keeping them on a paper towel. Then add salt and mix the potatoes. Place the potatoes on a serving plate and add aioli sauce to them.
  5. Then add the patatas bravas sauce. Enjoy your meal.
