  1. To prepare the caramel, put the granulated sugar and water in a non-stick pan. Cook over medium heat until the sugar dissolves and the color darkens slightly, and remove from the stove.
  2. Portion it evenly into the crème caramel cups. Crack the eggs into a deep bowl. Add granulated sugar and whisk until it reaches the consistency of cream.
  3. Add vanilla and whisk for 2 more minutes. Slowly add the milk while whisking, and continue whisking at high speed for 3–4 minutes.
  4. Use a ladle to remove the foam and pour the egg mixture into the caramel cups.
  5. Place the cups on a baking tray and add hot water to cover half of them. Bake in a preheated 170-degree oven until slightly golden brown.
  6. Remove it from the oven and let it cool down to room temperature. Refrigerate overnight. Flip the crème caramel cups upside down on serving plates, and serve cold. Bon appetit.
