Water Pastry

Ingredients

  • 4.5 cups flour
  • 3 eggs
  • 2 teaspoon of vegetable oil
  • 1 teaspoon of vinegar
  • 1 teaspoon salt

To roll out the phyllo pastry:

  • 1 cup flour
  • 1.5 cups wheat starch

For the filling:

  • 200 g crumbled feta cheese

Between the doughs:

  • 200 g butter
  • 1.5 cups warm milk
  • 3 eggs
  • 150 gr grated cheddar cheese

Instructions

  1. Sift the flour into the dough-kneading bowl. Make a middle like a pool and add 3 eggs, vegetable oil, vinegar, and salt. Mix and knead it well.
  2. Cover it with a damp cloth and rest it for 15 minutes. Knead it again, cover it, and rest it for another 30 minutes.
  3. Divide the dough into 12 equal pieces and cover them with a damp cloth. Roll out the pieces one by one with a rolling pin, sprinkle starchy flour between them, and roll them out to the size of a tray.
  4. Melt the butter and warm it. Add milk and eggs, then whisk. Separate two of the phyllo sheets and spread one of them on the greased tray so that the edges hang out.
  5. Add 2-3 spoons of the milky mixture and scatter 3 spoons of cheese. Fill a deep and wide pot with water. Add 1 spoon of vegetable oil and 1 spoon of salt and boil.
  6. Fill a separate pot of the same size with iced water. Put the remaining 10 phyllo sheets one by one into the boiling water and boil for 2 minutes.
  7. Carefully remove them and add them to the iced water to prevent tearing. Remove the phyllo sheets with a colander onto a clean kitchen cloth and let them drain.
  8. Spread half of the phyllo sheets on the tray on top of each other, and add the milk mixture and cheddar cheese between them. Sprinkle the feta cheese and spread the other phyllo sheets on top of each other in the same way.
  9. Spread the reserved phyllo on top and fold the overhanging parts inward. Spread the remaining milky mixture on it and bake in an oven preheated to 150 degrees for 40–45 minutes. Serve warm.

Expert Tips
  • Be careful to boil the dough enough without stirring it too much so that it does not fall apart.
  • In order to intensify the flavor of the pastry, you can grease the dough layers with the same amount of melted butter instead of 1 tea glass of olive oil.
  • You can add parsley to the filling if you wish.
