Vegetarian Quiche

Ingredients

For the dough:

  • 250 g flour
  • 150 g butter
  • 50 ml of water
  • 1 tsp salt
  • 3 egg yolks

For the filling:

  • 300 g zucchini
  • 3~4 sprigs of spinach
  • 3 sprigs of leek
  • 1 onion
  • 1 tbsp butter
  • Half a cup of feta cheese
  • Salt
  • Black Pepper
  • Chili powder

For the sauce:

  • 250 ml cream
  • 1 egg yolk
  • Salt
  • White pepper
  • 1 tsp grated nutmeg
  • Half a tsp of turmeric
Vegetarian Quiche

Instructions

  1. For the dough, mix the flour and the butter, which you have cut into small pieces, together with the salt. Add the egg yolks and water. Knead it to make a stiff dough.
  2. Wrap the dough with cling film and refrigerate for at least two hours. Divide the rested dough into equal pieces and roll out thinly with the help of a rolling pin.
  3. Place the dough into the greased and lightly floured tart molds and press the edges. Sprinkle a little more flour on the dough and refrigerate again.
  4. For the filling, finely chop all the vegetables and fry them a little bit in butter. Season with salt and pepper, and remove from the stove. Spread the warmed vegetables over the rested tart dough.
  5. Mix all the ingredients for the sauce in a bowl and pour it over the vegetables.
  6. Garnish with grated feta cheese and bake in a preheated 175-degree oven for 30-35 minutes. Serve hot or warm.
