Turkish Ice Cream


  • 5 cups milk (preferably goat milk)
  • 1 and a half cups of white sugar
  • 4 teaspoons of pure salep

  1. Put 5 cups of milk in a deep pot and boil it.
  2. Add sugar to the boiling milk and mix.
  3. Put the salep in a bowl and dissolve it with warm water.
  4. Add the salep slowly to the boiling sweetened milk and continue stirring.
  5. It is very important that the salep dissolve completely in milk. So stir until you are sure it has melted.
  6. Remove the boiling milk from the stove and cool it while stirring.
  7. When it has cooled down to a reasonable temperature, transfer it into a large bowl and place it in the freezer.
  8. After 15 minutes, remove the bowl from the freezer and stir with an iron spoon. Then put it back in the freezer.
  9. Repeat this process every 20 minutes until the ice cream has the consistency of chewing gum.
  10. When the ice cream has solidified, you can serve it. Enjoy your meal.
