Expert Tips
  • Mascarpone cheese must be used when making tiramisu.
  • To get the consistency of the cream right, make sure to use cold and fresh eggs.
  • To pasteurize the eggs, add the boiled sugar and water mixture to both the egg whites and yolks.
  • It is very important to whisk the ingredients until they are completely thickened.
  • All tools and equipment used in pastry products must be completely free of water. The product in contact with water prevents the pastry products from rising and negatively affects the formation of the desired consistency. For this reason, all tools and equipment should be thoroughly dried before being prepared for use.
  • It is very important to mix flour, sugar, and milk in the first place. It should be whipped well to avoid lumps during mixing.
  • After the cream is cooled, it should be whipped occasionally to prevent it from drying out, and a piece of butter will both glisten the cream and increase its flavor.
  • At the last stage, wait for the surface to cool so that the cocoa you will pour on the tiramisu does not soak into the tiramisu.
  • As with most patisserie products, tiramisu will become even more delicious when consumed a day after it is made. Keeping it in the refrigerator for a day will allow all the flavors to marinate.
