Tajine Zitoune


  • 4 chicken breasts or thighs
  • 1 chopped onion
  • 1 cup of green olives
  • 2 tsp turmeric
  • 2 tsp cumin
  • 2 tsp of red pepper powder
  • 2 tsp salt
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • 1 tsp black pepper
  • 1 cup of chicken broth

For garnishing:

  • Parsley or cilantro
Tajine Zitoune


  1. First, wash the chicken thighs or breasts and drain the excess water.
  2. Heat the olive oil in a pot and fry the onion.
  3. Then add the garlic and continue roasting.
  4. Add the chicken to the pot and sauté until it is well cooked.
  5. Add cumin, turmeric, red pepper powder, black pepper, and salt.
  6. Then add the green olives and mix.
  7. After adding the chicken broth to the pot, cover and cook over low heat for 30–40 minutes.
  8. Garnish it with parsley and serve. Enjoy your meal.
Expert Tips

Instead of chicken broth, you can also use drinking water.
