Shrimp Pad Thai

Ingredients

  • 6 medium-sized shrimp
  • 200 grams of rice noodles
  • 20 grams of peanuts
  • 50 grams of soybean sprouts
  • 1 egg
  • 2 cloves of garlic
  • 2 tsp brown sugar
  • 2 sprigs of spring onion
  • Black Pepper
  • Salt
  • 30 ml of soy sauce
  • 5 ml of fish sauce
  • 1 lime
  • 1 small tamarind

Instructions

  1. Put the rice noodles in a deep bowl. Pour boiling water over it and wait for it to soften.
  2. Mash the tamarind in a large bowl with a fork.
  3. Add fish sauce, soy sauce, and brown sugar to the tamari and mix.
  4. Finely chop the white parts of the spring onion. Chop the garlic in the same way.
  5. Put a large skillet on the stove and add oil.
  6. When the oil starts to heat, add the garlic and the white parts of the spring onion and sauté for 2 minutes.
  7. Then add the peanuts and sauté for 1 more minute.
  8. Place the shrimp in the pan and sprinkle salt over them. Roast in this way for 4 minutes.
  9. After 4 minutes, add the soybean sprouts and stir until they are all well blended.
  10. Then add the soy sauce mixture you prepared before.
  11. Reserve a space in one corner of the pan. Break the egg in this part and cook it.
  12. When the egg is cooked, mix it with the other ingredients in the pan. Serve the mixture you have prepared on serving plates, and serve hot. Enjoy your meal.

  • When soaking the noodles, soaking them in cold water and letting them soften for a while will ensure that the noodles soften better without falling apart.
