Rösti Potatoes With Raclette


  • 1 tsp. fresh thyme
  • 1/2 chives
  • 2 tbsp. parsley
  • 1/2 teaspoon tarragon leaves
  • The whites of two leeks
  • 2 tbsp. butter
  • Black Pepper
  • Salt
  • 4 potatoes
  • 1/4 cup vegetable oil
  • 4 slices of raclette cheese
Rösti Potatoes With Raclette


  1. Chop the herbs and greens finely. Mix in a small bowl and set aside.
  2. Heat a skillet over high heat. Put the butter in it and set the heat to medium. Add the leeks, salt, and pepper, and cook for about 10 minutes.
  3. Grate four potatoes and season with salt and pepper. Put the potatoes on a clean towel and squeeze them. Repeat this process until the potatoes run out of water.
  4. Add the potatoes to the pan, spread them evenly with a spatula, and cover the bottom of the pan.
  5. Add the Raclette cheese in a single layer and wait for it to melt. Then add the leek mixture on top.
  6. Add the remaining grated potatoes to the pan to cover the leeks and form a potato cake.
  7. When the bottom is golden brown, flip the potato mixture and bake for 10 minutes until crisp.
  8. Add finely chopped parsley on top of the potatoes, slice, and serve. Enjoy your meal.
