Poke is a traditional Hawaiian dish. It is cut into cubes. It is prepared by marinating raw fish caught by Hawaiian fishermen with salt, nori, and kukui nuts. It started when fishermen seasoned the pieces of their catch to serve as a snack.

Traditional poke consists of gutted, skinned, and deboned fish. It may consist of diced raw fish, Inamona, Maui onions, green onions, and sesame oil. It is served with spices and condiments, such as sea salt. Modern Hawaiian versions use soy sauce, furikake, dried chili peppers, caviar, and wasabi. Fish species may include dried octopus, raw tuna species, raw salmon, and shellfish. 

In North American versions, various fusions such as ponzu sauce, teriyaki sauce, sriracha sauce, avocado, mushrooms, crispy onions, pickled jalapenos, pineapple, cucumber, edamame, etc. can be used. It is also called new-generation sushi. It is a blend of American, French, Spanish, Chinese, and Japanese cuisines.

Ingredients

The most important part of preparing poke is preparing the seafood and marinating the raw fish. Put the boiled rice in a deep bowl. Then different types of ingredients, such as avocado, seaweed, spring onion, sesame, tofu, pickled jalapeno, caviar, boiled egg, soy sauce, and rock salt, can be added upon taste. 

Hawaiian Poke Bowl Ingredients:

  • 1 avocado
  • 500 g of salmon
  • 1 mango
  • 4 tbsp. of soy sauce
  • 2 tbsp. fresh ginger
  • 400 g sushi
  • A pinch of sesame seeds
  • 2 tbsp. powdered sugar
  • Salt

Shrimp Poke Bowl Ingredients:

  • 20-30 jumbo shrimp
  • 1–5 cups basmati rice
  • 4 tbsp. butter
  • 2 tomatoes
  • 1 cup of boiled chickpeas
  • Red cabbage
  • Salt
  • 1 avocado
  • 4 tbsp. soy sauce
  • A pinch of black cumin

Instructions

  1. Hawaiian poke bowl ınstructions: Boil the rice for 20 minutes. When it is about to cook, add powdered sugar, rice vinegar, and salt and mix well. Then let it cool. 
  2. Mix avocado, mango, and salmon in another bowl. Mix the grated ginger, sesame oil, soy sauce, and sugar in a bowl and add to the fish mixture. Refrigerate for 1 hour. Add sesame seeds on top, and serve.
  3. Shrimp poke bowl ınstructions: Melt 2 tablespoons of butter in a pot and fry the rice. When the rice is fried, add 2 cups of water and salt and cook until the water is absorbed. Melt the butter in another pan and sauté the shrimp. Chop the vegetables as you wish. In a deep bowl, first add the rice and then the other ingredients. 
  4. Sprinkle 1 tablespoon of soy sauce and black cumin on each serving bowl.
