Lamb Beyti Kebab

Ingredients

  • 1 kg lamb minced meat
  • 1 onion
  • 2 tsp salt
  • 2 tsp red pepper flakes
  • 1 tsp cumin
  • 1 tsp black pepper
  • 3 tbsp olive oil
  • 3 phyllo
  • 3 eggplants

For the dipping sauce:

  • 1 bottle of mineral water
  • 65 gr olive oil

For the tomato sauce:

  • 1 tbsp butter
  • 1 tbsp pepper paste
  • 2 tsp hot pepper paste
  • 1 cup grated tomato
  • 1 cup tomato juice
  • 2 cloves of garlic (grated)

Instructions

  1. Put the minced meat into a kneading bowl. Add the grated onion, salt, and spices. Knead the mixture well for about 15 minutes.
  2. Cover the meatball dough and refrigerate it for other preparations. Slice the eggplants lengthways into thin slices, oil both sides and fry them on the grill of a toaster oven.
  3. For the sauce, mix the mineral water and olive oil in a bowl. Lay one of the phyllo sheets on the counter. Spread the sauce on it with the help of a pastry brush.
  4. Fold three sides of the phyllo three-finger widths towards the center. Oil the folded sections in the same way.
  5. Arrange the eggplants side by side so that they are upright from the edge of the folded part (like piano keys). Make a long roll (two-finger width) from the minced meat you prepared on the eggplants.
  6. Cut the whole roll into round slices at a height of three fingers. Prepare the remaining two phyllo sheets in the same way. Line an ovenproof baking dish with baking paper.
  7. Place the rolls you prepared on them vertically (the minced meat will be visible through it). Drizzle 2-3 tablespoons of olive oil over them. Bake in an oven set to 190 degrees until the phyllo rolls turn golden brown. 
  8. Meanwhile, prepare your sauce. Melt the butter, add tomato paste, tomato juice, and grated tomatoes. After 10 minutes, add finely chopped garlic. Cook until the sauce has the right consistency.
  9. Pour enough tomato sauce to fill the gaps on the beytis you take out of the oven without delay.
  10. Place it in the hot oven again. After 10 minutes, remove it from the oven. Serve hot with whipped, strained yogurt. Enjoy your meal.
