We are here with the gingerbread cookie recipe from Bingül Mete, one of the classic flavors of Christmas.
Gingerbread, which has become one of the traditional symbols of the New Year, is prepared with cinnamon, cloves, ginger, and powdered sugar.

Gingerbread Cookie


  • 85 g butter
  • 150 g granulated sugar (or 150 g coconut sugar)
  • 250 g flour (or gluten-free flour)
  • 70 g of milk
  • 4 g baking soda
  • 4 g cinnamon
  • 3 g powdered cloves
  • 3 g powdered ginger

Royal icing for the top:

  • 2 egg whites
  • 250 g powdered sugar 
Gingerbread Cookie


  1. Mix all the ingredients in a bowl and knead until you get a soft dough. Refrigerate the dough for 1 hour to rest.
  2. When you take it out of the refrigerator, roll it out between 2 baking papers, thinner than 1 cm, using the desired cookie cutters, and place it on a baking tray lined with baking paper.
  3. Bake in a preheated oven at 170 degrees for 10–12 minutes.
  4. Put the egg whites and powdered sugar in a bowl, whisk them with a mixer on high speed, and put them into a piping bag.
  5. Decorate the cookies with the royal icing as desired and place them on a serving plate.
